"This is such a simple recipe but it is so good. The fish remains very moist. I like to use Hellman's lite mayo but use your favorite. Serve with a wedge of lemon"

Step by Step Method

Step 1

Pre-heat the oven to 375f

Step 2

Wipe the catfish and place in an oven proof dish, spread the top of the fish with mayonnaise

Step 3

Season with salt and pepper, dill weed and cajun spice

Step 4

Bake in 375 oven for 20 minutes or until the fish flakes easily

Step 5

Serve with a lemon wedge

Delicious. Instead of catfish I used mangrove snapper, because it was what I had it on hand. I made 2 filets, and on one of them I added some fresh bread crumbs on top. I was making another dish which had bread crumbs and I didn't quite use them all so I decided to add them to the fish. Well, with or without the bread crumbs, the fish was great. The catfish would be excellent. Made it as is. Very moist and tender.

I used tilapia instead of catfish because that's what I had, so I reduced the temperature to 325F. Otherwise, followed exactly as written, this easily makes my top ten! Thank you for a simple, delicious recipe.
