Step by Step Method

Step 1

Put potatoes in a pot and cover with cold salted (a good pinch) water, bring to the boil over a high heat and once boiling turn to a simmer and cook till tender, depending on size of potatoes 30 to 45 minutes.

Step 2

In the meantime put sliced onions into a frypan/skillet and put enough oil in to coat them (I use my hands to lightly massage them and it separates the segments too), cook under a very low heat with a lid on the pan stirring occasionally until a golden brown (about 30 minutes).

Step 3

Drain potatoes, add butter and milk and mash to the consistency you like (I like it smooth) and then add salt and pepper to taste and finally stir through the caramelised onions and serve.

It takes a while to prepare the onions but it is so worth the extra effort! These potatoes were the perfect side to my Sunday Pot Roast with Sauteed Green Beans and Garlic. I now make them often!

The carmelized onions mixed into the mashed potatoes are so good. We loved them. Instead of the warm milk I used 2% cottage cheese - it melts right into the hot potatoes. I cut the recipe back to 2 medium potatoes with 2 tablespoons cottage cheese. This recipe is so delicious it will be made often.

Smells Like Salad

I love mashed potatoes and I love caramelized onions so for me this was the perfect match! I used red potatoes and standard yellow onions although I think shallots would be an interesting twist/sub for the yellow onions. This side dish was served with baked chicken thighs and a tossed salad. I really could make a meal off this myself. Good idea to warm the milk (I forget about that trick and it's always too late by the time I do remember!) These spuds would be magical in a taco! Prepared for Best of 2015.
