Marinated Portabella Mushroom Burgers

"This is a very low-fat healthy vegan recipe that even meat lovers may like. The oriental style marinade adds lots of flavour to the mushrooms, these are best grilled but also good broiled, grilled is better though "

This is by far one of the best tasting mushroom burgers I have ever tried. I used regular soy sauce, so I omitted the salt. I topped these with lettuce, cukes and sesame mayo and brushed a bit of the marinade on the toasted buns. AWESOME!!!!.

  Ingredients

  US | Metric  Print Ingredients

  • 4 portabella mushrooms (choose a size that will fit on burger buns)
  • 1/3 cup soy sauce
  • 1/3 cup rice vinegar
  • 2 teaspoons sesame oil
  • 2 cloves garlic, minced
  • 1 teaspoons fresh grated ginger
  • 1 tablespoon liquid honey
  • 1/4 teaspoon salt
  • 1/4 teaspoon freshly ground pepper
  • 4 hamburger buns, brushed with olive oil then toasted on the grill

What You Will Need

No special items needed.
  How to Make

Step 1

Clean all the mushroom caps very well. Hold each mushroom upright and carefully twist out or cut the stem flush with the cap. Reserve the stem for other recipes. Tap the cap to dislodge dirt from the gills. Clean with a soft brush or cloth.

Step 2

Place mushrooms in shallow glass dish.

Step 3

Combine next eight ingredients. Brush marinade on both sides of mushrooms. Pour remaining marinade over. Cover. Refrigerate several hours or overnight.

Step 4

Grill or broil, 3 to 4 minutes per side, or until tender, basting frequently with marinade. Serve whole on toasted buns.
