"I usually make a few batches of this recipe at a time and preserve these. If you are going to be eating these within a a month, you don't have to preserve them; just place them in a covered container, refrigerated until ready to use. They need to sit at least a week to get the full flavour."

Place the vinegar, water, sugar, mustard seeds and dill in a non-reactive saucepan and bring the mixture to a boil.

Remove the pan from heat and add the beets.

Allow mixture to cool.

Store beets and marinade in sterilized jars.
