Step by Step Method
Step 1
In a saucepan, heat the oil. Add the onion and garlic and cook over moderately low heat, stirring occasionally, until softened, about 7 minutes.
Step 2
Add the brown sugar and cook, stirring occasionally, until the sugar melts. Add the remaining ingredients and cook over low heat until the fruit starts to break down and get very soft (about 20 minutes).
Step 3
Cool slightly then transfer the mixture to a blender or food processor and puree until smooth. Season with salt and pepper.
Step 4
Cool down to room temperature then refrigerate 24 hours or longer before using.
