Heat the oil & fry the peppers with the shallots for 3 minutes or so.

A great corn recipe. I didn't have any red bell pepper, so I only used green (and I had some fresh corn, so I shucked two cobs and cut off the kernels). It was awesome! Kids loved it and I was happy to make something that was easy and appreciated.
