Step by Step Method
Step 1
Prepare dressing-combine oil, vinegar, parsley, lemon juice, garlic, basil, red pepper flakes, and oregano in a small jar.
Step 2
Shake to blend, season with salt & pepper.
Step 3
Line a plate with paper towels.
Step 4
Heat a large skillet over medium heat.
Step 5
Add bacon and cook until crisp and brown, 5-7 minutes.
Step 6
Using a slotted spoon, transfer bacon to plate to drain.
Step 7
Drain off all but about 1 T of the fat from the skillet.
Step 8
Add the red onion and cook til tender, about 2 minutes and set aside.
Step 9
To assemble, place spinach in a large bowl.
Step 10
Add reserved bacon and onion, mushrooms and eggs.
Step 11
Drizzle a little dressing, then toss to coat, adding more if needed.
Step 12
Taste and adjust for seasoning with salt & pepper and serve immediately.
