Step by Step Method

Step 1

Preheat oven to 400F. Adjust rack to lowest level for baking.

Step 2

Combine coconut milk, coconut flakes, eggs, limeade, sugar, flour, extract, and salt in a blender. Blend until mixed, and pour into pie shell.

Step 3

Bake for 15 minutes.

Step 4

Reduce oven to 350F and bake for 40-45 more minutes or until set.

Step 5

Cool on rack for 1/2 hour and refrigerate until cold before cutting.

Step 6

If desired, serve with sweetened whipped cream, lime curls or fruit of choice.

Made for Pick Me Tag - Making this recipe was about making a lime dessert for Siggi because he loves them, but it became a mission of determination. I do favor using convenience foods, but I got no help in that regard. Both the frozen limeade concentrate & the pre-made pie shells are not sold here, but I was stubborn. I found a recipe for the concentrate on-line & made my own pie crust using 1 of Derf's recipes that has never failed me. My pie plate is very shallow. Worried about overflow, I divided the recipe into 2 pies using my shallow pie plate & 2nd smaller one that's meant to serve 2. All that said, we love this pie! After enjoying the sml pie, I suggested we freeze the lrg pie for a guest occasion & Siggi nixed the idea saying he wasn't sharing it w/anyone! Thx to you at least for sharing the recipe w/us. Yum! -- Forgot to mention I sprinkled dried mint over the whipped cream. It would've been so pretty w/real mint leaves, but that's a summer crop for us. :-)

This is a very lovely pie! I have never used or had limeade before and was pleasantly surprised at its flavour. Did cut the sugar back to 1/4 cup and it was perfect for us. Next time I will add some lime zest to the mix. As the pie browned very quickly, I cover it loosely with tin foil until it was done. At our elevation it baked in 20 minutes. Will be sharing this with visiting family next week. Thanks Mike for a yummy pie! Made for Billboard Recipe tag.
