Step by Step Method

Step 1

In a large pot over medium heat fry the bacon until browned. Add the vegetables (onions - celery) and cook until onions are tender. Str in ham, lentils and spices (salt - bay leaves) and 8 cups of water. Cover, simmer over low heat for one hour or until lentils are tender. Discard bay leaves. add lemon juice and more salt if desired.

A hardy great tasting soup I enjoyed. I was a touch short on the ham and as I remembered from back when went with a tablespoon of vinegar instead of lemon juice. Froze the extra in screw top serving size freezer containers, and yes this soup is very freezer friendly its been added to my soup cookbook.

Hubby gave this the most stars possible...he loved it...this was very easy to prepare and it makes a lot...I cut the recipe in half and he ate a whole bowl full and I think there's still enough for 4 more servings...he used vinegar instead of the lemon juice...his family is from Germany and that's what they use...old habits are hard to break...made for "Bill Board" tag game...
