"Made this years ago, when we had lemon's at our old house. The kid's loved it, with a touch or raspberry cordial to make it pretty and I loved it with soda water. I had forgotten about it until I saw this exact same recipe published in "That's Life". So I am about to start making it again over summer."

Step by Step Method
Step 1
Place caster sugar in a heavy-based saucepan with 1 cup water.
Step 2
Bring to the boil, stir to dissolve sugar and simmer for 1 min. Remove from heat and allow to cool while you juice the lemons.
Step 3
In a large jug, combine the lemon juice, cooled sugar syrup and 4 cups of cold water. (You may need more or less water according to your taste).
Step 4
Stir to combine well and chill in the fridge before serving with plenty of ice. Garnish with thin slices of lime and mint sprigs.
