Salmon baked with lemon, ginger and soy sauce. From a diabetic website.

1 1/2 teaspoon fresh ginger, peeled and minced
2 medium garlic cloves , peeled and minced
2 tablespoons low sodium soy sauce
1 tablespoon fresh lemon juice
2 teaspoons grated lemon rind
2 teaspoons light honey
3 tablespoons fresh basil , chopped
3 tablespoons Italian parsley, chopped
4 salmon fillets (5 ounces each)

Preheat oven to 425°F. |
Step 2 |
In small bowl, mix ginger, garlic, soy sauce, lemon juice, lemon rind, honey and fresh herbs. |
Step 3 |
Place fillets in shallow baking dish and spoon some herb mixture on top of each fillet. Drizzle any liquid accumulated in bowl over fillets. Allow to sit at room temperature for 15 minutes. |
Step 4 |
Bake, uncovered until salmon turns opaque, about 15 minutes. |
Step 5 |
Place fillets on plates and drizzle any liquid in baking dish over them. |
