"These painfully easy cookies are a huge hit with the kids every time I make them. You can use different flavours of cake mix for variety if you'd like (I've made chocolate, cherry, and red velvet successfully). I always double these so I don't have to deal with a half-carton of Cool Whip, but that's up to you."
Preheat oven to 350F.
In a mixer bowl, combine all ingredients except confectioners' sugar; mix well.
Using hands, form dough into approximately 1-inch balls; roll each in confectioners' sugar. *If dough is too sticky, refrigerate for 15-20 minutes before rolling.
Place each ball on ungreased baking sheet, about 1 1/2 inches apart.
Bake for 8 minutes or until lightly browned. Remove to cooling racks and let cool completely.
