Step by Step Method

Step 1

Boil water and cook pasta as directed on package, until al dente. When pasta is done, drain well, return to pot, then add sliced chicken pieces, and set aside.

Step 2

Meanwhile, heat garlic, oil, lemon juice, and red pepper flakes over low heat for about 10 minutes. When a few minutes remain, add grated Parmesan cheese, and stir as it melts.

Step 3

When cheese is melted, remove from heat, and fold spinach into sauce until wilted.

Step 4

Toss pasta and chicken with sauce, and top with lemon zest and grated Parmesan cheese.

Step 5

Serve.

We enjoyed this very much. We loved the taste of the lemon with the cheese, chicken and veggies. Such a great meal it made! I liked that it took no time at all to make it and get it on our plates and my son raved about it. A keeper for us!

My daughter came over for dinner so I made this for us. It was delicious in every way possible! The chicken was tender, the pasta soaked up the flavor from the lemon and garlic, and the heat from the red peppers really added another dimension altogether. The spinach and cheese pulled it all together and it was a great pasta dish that I will make often!
