Leek Confit
"Recipe found on Epicurious. com and originated in Bon Appetit, October 2008 edition. I love leeks and this would make a very nice side dish for holiday dinners."
- 1/4 cup unsalted butter, equals 1/2 stick
- 4 large leeks, white and pale green parts only, halved lengthwise, cut crosswise into 1/4-inch-thick slices (about 5 cups)
- 2 tablespoons water
- 1/2 teaspoon salt
What You Will Need
No special items needed.
Step 1
Using a large saucepan or Dutch oven over medium low heat add butter. When butter has melted add the leeks and stir together coating the leeks with melted butter. Mix in water and salt then cover and cook over low heat stirring frequently for 25 minutes or until leeks are tender. Remove lid and cook about 2-3 minutes or until any remaining liquid is evaporated. Serve immediately.
