Step by Step Method
Step 1
Mix honey, and molasses in a large saucepan and heat to boiling. Cool thoroughly.
Step 2
Stir in sugar, eggs, lemon peel and lemon juice.
Step 3
Mix in remaining ingredients.
Step 4
Cover and chill 8 hours.
Step 5
Heat oven to 400.
Step 6
Roll small portion of dough at a time to 1/4 inch thick, keeping remaining dough chilled.
Step 7
Cut dough into 2 1/2x 1 1/2 inch rectangles and place 1 inch apart on greased baking sheet.
Step 8
Bake 10 to 12 minutes or until no imprint remains when touched lightly.
Step 9
To make glaze, heat sugar and water in a small saucepan. Cook till candy. thermometer reads 230. Remove from heat and stir in icing sugar.
Step 10
Brush glaze over cookies.
