"This little recipe is more process than product, since you can vary the ingredients to fit the occasion or the taste buds. Make a dozen to feed four or a hundred to feed a group. Try them with chicken or use a vegetable filling for a meatless meal. Let the kids cook a tasty dinner. Good for a portable lunch, a potluck, a buffet, or a family meal with a green vegetable or salad and thin, crunchy bread sticks."

Step by Step Method

Step 1

Set out the ingredients so assembly will be quick. If the Won Tons are square, trim the corners or cut with a cookie cutter for more even baking. Ends that stick up will be overcooked.

Step 2

To assemble, spray muffin tins very lightly with vegetable or olive oil spray and drop a dime sized bit of Marinara in the bottom of each cup.

Step 3

Place one Won Ton in each cup, gently fitting it to the sides and bottom.

Step 4

Layer, in order, one tablespoon of cooked beef, one tablespoon of Mozzarella, and one tablespoon of Marinara.

Step 5

Repeat the layers, beginning with a second Won Ton and topping it with beef, Mozzarella, and Marinara. Top the whole muffin with 1/2 teaspoon of Parmesan.

Step 6

Bake at 375 degrees Fahrenheit for 7-8 minutes until the cheese is melted and the wrapper is golden but not brown.

Step 7

Cool slightly and remove from the pan. Serve hot or cool completely and refrigerate until ready to reheat. Depending on the number of muffins, reheat at 375 degrees Fahrenheit for 2-3 minutes.

Step 8

For a vegetarian version, saute a mixture of chopped onions, zucchini, and mushrooms with some oregano and basil and substitute the vegetables for the beef in the recipe above.

Step 9

To use the wrappers that are left over (fresh or frozen and thawed): fry them briefly and dust with cinnamon sugar or a salt and cajun spice mix, blind bake extra cups in a mini-muffin pan for appetizer quiches or to hold baked eggs, bake or fry strips to top a salad.

I actually made these on the grill to see if it was possible and they were really delicious and doing them this way worked out well! I did put them in a muffin tin. Be sure the heat doesn't get too hot. The heat should stay around 375-400 degrees so they don't get burned.

I used ground pork and ground beef, and made spaghetti sauce to use for the sauce. I loved the idea of making these individual servings. They are so easy to freeze for later use. They were real tasty and we all agree to have them again soon! I am bringing them to work for lunches which will be a real treat for me!

These were a big hit with my family and I. I made them and used pepperoni instead of the meat. I am going to make some of these up ahead to freeze for quick dinners when we are on the run during the week and don't get home until late. This is a kid and adult pleasing recipe and it is really liked by us a lot!
