"Made with spinach (green) noodles instead of the more usual lasagna noodles, this recipe came from my mother and is one of the best versions of lasagna I've tried. It serves 4 very generously or 6 less generously."

Step by Step Method

Step 1

Sauté onion, green pepper, garlic in oil till transparent.

Step 2

Add sausage and brown fast.

Step 3

Add other ingredients.

Step 4

Cover pan and simmer VERY slowly for at least 3 hours, stirring occasionally and adding small amounts of boiling water if needed.

Step 5

Toward the end of the cooking time for the sauce, cook noodles in boiling salt water al dente (8 minutes). Drain well.

Step 6

Spread a thin layer of the sauce in the bottom of a buttered baking dish.

Step 7

Cover with noodles.

Step 8

Add a layer of mozzarella and dabs of ricotta.

Step 9

Add another layer of sauce, noodles, etc., till all are used, finishing with the sauce. Sprinkle top with Parmesan.

Step 10

Bake at 350' uncovered for 45 minutes.

Very simple recipe with great flavours. This takes a bit of time but well worth it. The end result was an amazingly thick, meaty and cheesy lasagne!! I did not use the ricotta as I am not a fan so instead I used more shredded mozzarella. Great recipe, thx for sharing it here.
