Step by Step Method

Step 1

In a large bowl,combine eggs with panko, milk, garlic, lemon zest, mint, parsley, salt, and pepper and let sit a few minutes for crumbs to soften. Add lamb, breaking up with your fingers, and mix well with your hands. Cover and refrigerate for 24-48 hours.

Step 2

Using slightly moist or oiled hands form meat mixture into 1-inch balls and set on greased baking sheet. Bake 350 degrees F for about 25 minutes or until browned

This recipe was really enjoyed.   I made half the recipes and got 12 meatballs. Using the fresh herbs was great. Served with an eggplant recipe #27138 was perfect. They really complimented each other. Thanks Kitten for yet another wonderful dinner
