"The amounts listed should serve six, when I make this for a summer get together I always double the amounts, I recommend using fresh mozzarella, you will usually find it in the deli section I purchase mine at our local Italian store. Prep time does not include making the dressing, the salad amounts are really only a guideline you may of coarse use whatever amount you want"

Step by Step Method
Step 1
Prepare the salad dressing and chill for a few hours.
Step 2
In a large bowl combine the lettuce with next 9 ingredients (you can refrigerate for a few hours while the dressing is chilling). Pour desired amount of dressing over; toss to coat. Sprinkle the top with Parmesan cheese. Allow to sit for 20 minutes at room temperature before serving.
