"A traditional Irish "cake", which is actually more of an apple bread. Serve with afternoon tea. NOTE: This calls for cake flour, but if you use all-purpose flour, increase butter to 6 ounces. Easy apple cake to make from scratch."

Step by Step Method

Step 1

Preheat the oven to 375F. Prepare a 9-inch round baking pan by coating with cooking spray or coating with butter.

Step 2

Sift the cake flour, baking powder, salt, cloves and nutmeg into a large mixing bowl.

Step 3

Cut the butter into the flour and rub it in using your fingers or a pastry cutter until the mixture resembles fine bread crumbs.

Step 4

Mix in sugar.

Step 5

Peel, core and dice the apples. Toss the pieces with the flour mixture.

Step 6

Beat the eggs and add a dash of milk. Add to the apples and flour and combine well with a large spoon.

Step 7

Add more milk as needed to fully moisten the flour. The dough will be sticky.

Step 8

Transfer the dough into the prepared cake pan and flatten the top surface using the back of a large spoon.

Step 9

Sprinkle two tablespoons of sugar over the top of the cake.

Step 10

Bake 45-50 minutes, or until a toothpick or knife comes out clean when inserted in the center of the cake. The top will be a golden brown.

Step 11

Cool for 5 minutes in the pan, then transfer to a wire wrack to finish cooling.

Step 12

Serve slightly warm.

4 ounces butter equals 8 tablespoons I too used more milk about 1/2 cup or more Mr picky really liked this spray the heck out of pan I just did light and it wanted to stick ,it acts more like a biscuit or bread to us ,but a really good one with butter

Very good cake -- we used red apples and used 4 apples. I also used a bit more milk than called for and cooked for one hour, but also used a smaller pan (8 inch round). Interesting cake -- perfect for breakfast, brunch or anytime. Thanks for sharing!
