Just a Little Squash

"When you just want a small amount of steamed squash to serve one or two people, this is a great way to fix it quickly. I used the mini sized zucchini, but you could also use a small regular zucchini and cut it into slices first. 8 ounces is about 8 mini zucchini or 1 very small normal sized one. This works equally well with any soft-skinned squash, such as yellow summer squash."

  • 2 teaspoons fresh lemon juice

  How to Make

Step 1

Place zucchini in a covered microwaveable dish and steam just until tender, about 2 minutes, but this time will vary based on how soft or firm you like your squash, and also your microwave wattage.

Step 2

As soon as squash is ready, add the remaining ingredients and toss lightly; the butter will melt from the heat of the squash.
