Jody's Chicken Stir-Fry For Fussy Eaters

- 750 grams chicken tenders (strips)
- 2 tablespoon light soy sauce
- 1 clove garlic, minced
- 1 teaspoon grated ginger root
- 1/2 tablespoon olive oil
- 250 grams baby spinach
- Red capsicum (1/2 pepper, finely diced)
- 1 zucchini (small zucchini, finely diced)
- 1 carrot, finely diced
- 1 tablespoon chicken stock powder
What You Will Need
No special items needed.
Season the chicken strip with the soy sauce, garlic and ginger and set aside to marinate while you prepare the vegetables.
Heat the oil in a pan on medium heat until quite hot and then add the chicken and brown and then add the vegetables and stir fry for a few minutes, then sprinkle the stock powder over the dish.
Allow to cook until the vegetables are tender but not soft and serve in bowls with cook rice.
