Heata skillet over medium heat,add oil, add mushrooms and garlic, stir fry for about 3 minutes or until the mushrooms and garlic is just beginning to brown

Turn the heat up,add remaining ingredient and stir fry for 5 minutes - This will leave the veggies still crunchy - serve
