"I first had this while on a vacation in Jamaica and fell in love with the flavors, I have to admit over there they do make it the best, I tried a few Jerk chicken recipes and so far found this one to be closest to the one I had in Jamaica. There's lots of different recipes for this but most authentic jerk marinades incorporate scallions, scotch bonnets, thyme and allspice. These exotic flavors combined makes for the best grilled chicken you have ever had! Chicken must marinate for 24 hours."

Step by Step Method
Step 1
Place chicken in large Ziploc bag or large container.
Step 2
Blend all Jerk marinade ingredients in food processor, then pour into bag over chicken. Seal bag and toss a few times to assure chicken pieces are coated and again toss whole in the fridge.
Step 3
Marinate overnight (24 hours).
Step 4
Grill on medium-high heat, covered, until chicken is fully cooked.
