Step by Step Method

Step 1

Trim fat from tenderloin. Combine lime juice and next 5 ingredients in a large heavy duty, zip top plastic bag. Add pork; seal bag, and marinate in refrigerator for 30 minutes.

Step 2

Remove pork from bag, reserving marinade. Coat grill rack with cooking spray; place on grill over medium coals. Place pork on rack and grill covered, 30 minutes or until meat thermometer registers 160 degrees, turning and basting pork occasionally with reserved marinade.

Step 3

Cut into 1/4 inch thick slices. Serve with chutney.

Very yummy pork tenderloin, I marinaded it for 6 hours in a plastic bag, I only made one tenderloin next time I'll make two, and it went perfect with mango chutney, thank you Derf

This is a very special entree that I will cherish and make again and again. The mix of ingredients lends to a marvelous sweet, savory, and spicy mix that I especially loved. Do use the chutney, as I think it is the finishing touch of sweetness that is needed to make this over the top. Thanks for sharing!
