Step by Step Method
Step 1
Heat the oven to 200C.
Step 2
For the filling: Simmer the jam, dates, lemon juice and 3 tablespoons of water in a medium saucepan over medium heat. Cook until dates are softened, this will take about 8 minutes.
Step 3
To make the Crust: Heat the oven to 200C. Stir together the flour, baking soda and salt in a bowl. In another bowl, and using an electric hand mixer, beat the butter and sugar until fluffy. Whilst beating, slowly add the flour mixture and oats and beat until crumbly dough forms.
Step 4
Press half the dough into the bottom of a 20cm square baking dish. Spread the filling over the crust. Crumble the remaining dough over the top. Bake until golden, about 20 minutes.
Step 5
Let cool completely before slicing. Store in an airtight container in the fridge
