Step by Step Method

Step 1

Into a bowl, beat the egg yolks and whites seasoned with salt and a little pepper,

Step 2

Then add the diced salami and the parsley, previously washed and chopped.

Step 3

In a pan stir-fry some finely-sliced onion in olive oil, then pour the egg mixture into the pan and cook until golden.

While I didn’t follow the directions precisely , I believe the end result was in the spirit of the recipe. First I finally diced some onion and sautéed it in the olive oil until it was soft . I added the eggs and the salami and cooked until almost set, the scrambled it towards the end. Delish! Made by a fellow Feed Bag for Susie’s World Tour 2019.

This was so easy and so good! I sautéed the salami with the onions and then wiped the pan to get rid of some of the excess fat. Very flavorful! Made for CQ2019

The salami does not overwhelm the omelet but just adds flavour. Easy come together omelet. Lovely brunch recipe.

The only changes I made was to slice my onion and use the parsley as garnish and I scrambled the mix instead of letting it set as per a omelet but the end result was a delicious and filling breakfast, thank you dienia b made for Alphabet Soup tag game.
