Step by Step Method
Step 1
Heat the oil until it shimmers in a medium pot with lid .
Step 2
Brown the pasta.
Step 3
Add the turmeric and stir for a few seconds until fragrant.
Step 4
Stir in the rice, brown lightly. Salt, cardamom, and cinnamon. Add hot water.
Step 5
Increase the heat to high and boil the rice until visible moisture is absorbed, about 5 minutes.
Step 6
Reduce the heat to low, and simmer rice, covered, for 20 minutes.
Step 7
Turn the rice gently with a wooden spoon 2 to 3 times while simmering to allow it to fluff.
Step 8
Serve with cardamom and cinnamon still in the rice, for garnish,( i take out )
Step 9
Typically alongside some Iraqi fish.
