"This dry instant pudding/pie recipe was given to me by a friend over 35 years ago. By eliminating the eggs and heavy cream, this becomes a low fat treat. But if you prefer it creamier, you can replace the water and add milk instead. The vanilla pudding is very white because it has no egg yolks in it. (the chocolate is the best, IMO) You can make almost any flavor you want by adding a few extra ingredients. I think the dry mix would also work really well adding it to cake mixes that call for a pudding mix."

Step by Step Method
Step 1
In a medium bowl or container combine all ingredients together. Store mix in an air-tight container.
Step 2
To make Vanilla Pudding: in a 2 quart saucepot add: 1 cup mix, 2 cups cold water.Heat mixture on medium high heat and stir until slightly thicken. Add 1 tablespoon butter, 1/2 teaspoon vanilla. Mix well; add to serving dishes or a cooled pie shell. Cool at room temperature for two hours then finish chilling in the refrigerator. Garnish with whipped cream, if desired.
Step 3
To make Chocolate Pudding: Mix as for vanilla pudding but add; 1/4 cup cocoa and 1/4 cup sugar. Heat mixture on medium high heat and cook until slightly thickened. Add vanilla and butter. Add pudding to dishes or cooled pie shell, cool, chill and garnish with whipped cream if desired.
