"Do you love the famous Rotel and Velveeta dip? If you do, this is for you. It is a favorite at our poker game nights, and it is so easy to prepare. Plus ... there is usually a little leftover cheese dip; so enjoy it the next day with some chips. The onion rings really top off this burger. NOTE: These also make great slider with just 1 onion ring. Great at parties or game night with friends."

Step by Step Method

Step 1

Burgers ... Add the beef, garlic, shallot (make sure to grate it over the bowl to get the juice), worcestershire, salt and pepper and mix to combine. Try not to over mix as it can cause the burgers to become tough. Make 4 patties and press a indentation in the center with your thumb. Add the patties to a baking sheet lined with foil or parchment and refrigerate or freeze to allow them to firm up. You don't want them frozen; just firm.

Step 2

Onion Rings ... Now, you can make your own; but I take advantage of the frozen ones. You just need a couple for each burger so the frozen ones make it easy. So, get them in the oven to heat up; follow pkg direction to re-heat.

Step 3

Cheese Sauce ... Add the rotel to a bowl with the cheese and microwave 2-3 minutes on medium. Stir and continue to heat until on medium everything is melted and mixed through. NOTE: You want to make this ahead and chill before using. You will be spreading on the chilled spread, NOT when it is warm. You will have leftover dip; so make sure to save and enjoy with chips tomorrow. You could always make a half recipe, but it is so good; why not make it all. The dip is also good served over broccoli or baked potatoes.

Step 4

Burgers ... Season the burgers with a the remaining salt and pepper and grill or pan fry until your desired doneness; and toast the buns if you want. I like medium well for the burgers; and I do prefer my buns toasted.

Step 5

Serve ... This is my way - Bottom roll, lettuce leaf if you want, the chilled cheese spread, burger, onion rings, and finish with the top bun also spread with the cheese spread. The heat from the burger and onions rings will melt the cheese and heat it up nicely. Now you can make it how you want. But this is how I like it. The lettuce on the bottom prevents the bun from getting soggy. ENJOY! with some chips and a dill pickle.
