Step by Step Method
Step 1
Preheat oven to 200C.
Step 2
Cook the pasta in a large saucepan of boiling salted water following packet directions or until al dente and then drain well.
Step 3
Meanwhile, heat oil in a large frying pan over medium heat and add onion, carrot and celery and cook, stirring, for 5 minutes or until onion softens and then add mince and cook, stirring with a wooden spoon to break up any lumps, for 5 minutes or until mince changes colour and is cooked through and then add the pasta sauce and thyme and cook for a further 5 minutes or until sauce thickens slightly and finely add the silverbeet and gently stir to combine.
Step 4
Add the pasta to the sauce and stir to combine and season with salt and pepper to taste.
Step 5
Spoon pasta mixture evenly among four 2 cup (500ml) ovenproof dishes and place on baking tray.
Step 6
Sprinkle each dish evenly with cheddar cheese and top with a sprig of thyme and then bake for 15 to 20 minutes or until heated through and cheddar cheese isw golden brown.
Step 7
Serve immediately with salad leaves.
