Step by Step Method

Step 1

Heat the butter over medium heat in a medium sized saucepan. Add onion, saute until light browned, around 5 minutes. Add turmeric, cumin and cinnamon, cook for 1-2 minutes.

Step 2

Add the rice and garlic to the pot and cook (stirring occasionally) for about 2 minutes to slightly toast or brown the rice.

Step 3

Very carefully add the chicken broth and the bay leaf to the pot. Stir. Place a lid on it, increase the heat to high and bring it to a boil. As SOON as it reaches a boil, lower the heat to a simmer and let the rice simmer for 20 minutes. Do NOT lift the lid.

Step 4

After it simmers, turn the heat off and let the rice set for 10 min (again do NOT lift the lid).

Step 5

Fluff with a fork and serve!

I scaled back for 2 and allowed 15 minutes for the rice to cook and then the 10 minutes resting time and it came out perfectly and was a delicious side to our http://www.recipezazz.com/recipe/curry-twist-15934, thank you BudgetCooker made for Alphabet Soup tag game.
