This breakfast sandwich includes the ingredients & flavors of huevos rancheros including: Refried beans, guacamole, salsa ranchera & fried eggs. The recipe is written for 1 serving, but is an easy blueprint for mass production to feed a family or group of friends. Just line up the English muffins & start piling on the ingredients while you cook the eggs. Then serve the sammies all at the same time w/maybe some hash &/or fruit already on the table. ENJOY!"

Fry the egg as desired, seasoning w/S&P to taste.

What's not to love about this! I made my own refried beans and used of course avocado. Instead of the English Muffin I used these biscuits: http://www.recipezazz.com/recipe/3-ingredient-coconut-oil-biscuits-21825 Will make this again, could eat it for every meal :) Thanks for sharing! These are super yummy. I used your avocado/lime option (and doubled the amount). I had them for breakfast, but would definitely eat these for lunch or dinner too.
