Step by Step Method

Step 1

Using kitchen scissors or a sharp paring knife to cut lengthwise down each vanilla bean, splitting them in half, leaving an inch at the end connected.

Step 2

Put vanilla bean in a glass jar or bottle with a tight fitting lid (mason hars work well) and cover completely with the vodka (or gin though the DD used vodka).

Step 3

Give the bottle a good shake every once in a while and store in a dark, cool place for 2 months or longer.

Step 4

Lasts for years and you can keep topping it off with vodka (or gin) once in a while as your use it, just remember to give it a good shake.

I used a little bit of my vodka only after about 1 1/2 weeks so as expected it was very strong. Vodka was on hand so I did use that and then left the bottle in my pantry cupboard. The recipe called for 1 teaspoon of vanilla so I used 1/4 teaspoon and that was a good amount. Nice fresh clean vanilla fragrance to the extract and cant wait to use it after 2 months.
