"I'm trying to up the protein in my diet, so we have eggs a lot. Here's another take on scrambled eggs."
With an immersion blender, combine eggs and water until smooth and pale yellow.
Heat a non-stick skillet to medium. Add butter if using or spray!
Pour in eggs, gently stir until bottom is cooked but not browned. Tops will look shiny.
Sprinkle cheese on top. Turn off heat. Cover pan. Let sit for a couple minutes until cheese is melted.
Sprinkle with salt, pepper and hot sauce to serve.
