What's not to love?? This is quick, easy and, delicious and perfect for a busy weeknight dinner. It has been crazy busy here so I defrosted some left over roast beef, used a packet of gravy and and envelope of instant mashed potatoes. YUM!

When I was a kid, I spent my summers with my grandparents and once a week grandma and I would catch a city bus into downtown to shop at Pike Place Market and the have lunch. A long gone restaurant had hot pork or beef sandwiches, which I alternated. This recipe brought back memories. And it is really easy, since I used a Costco heat and serve pot roast, instant mashed potatoes and canned gravy. Thanks for posting this keeper.

Yum. I used some leftover prime rib that I had in the freezer and devoured this. Thanks for sharing, Dee.
