"It's so easy to and inexpensive to make homemade Horchata! I usually make a diet version of this, and I double it to make a gallon. I've also thought of putting a little honey in it, but haven't tried it yet. This tastes so much better than the 'fountain' version. Kids and adults all love it. Oh yeah, and if you didn't know...don't pronounce the "H" or Spanish speakers will laugh at you. "

I really had no idea what to expect from this recipe as I had never even heard of a Horchata. I choose it because it was intriguing. I shook it all up and poured it over crushed ice just before taking the photo. It is quite good and if you love.... Read more
- 1 1/2 cups white rice, uncooked
- 7 cups water
- 2 to 3 teaspoons ground cinnamon
- 1 1/2 tablespoons vanilla extract
- 3/4 to 1 cup Splenda granular or Sugar (can use half of each too, or try some honey)
- 1 (12 ounce) can fat free evaporated milk
- Ice, to serve
What You Will Need
No special items needed.
In a blender, blend rice and water in batches until the rice is chopped up, and the water is white. Pour rice and water into a 2 quart container and let sit 4 hours to overnight. Shake or stir it every so often if you're able to.
Strain the rice/water mix through a fine sieve, cheesecloth or clean pantyhose. Pour strained water into a 2 quart pitcher. Discard rice or cook for another use.
Stir in remaining ingredients. *I've thought of heating some water, honey and cinnamon together before stirring it in but haven't tried it yet.
Serve over ice. It's best chilled before serving for the cinnamon to blend in and infuse it. Stir or shake before each serving. Enjoy!
