"This is out of "The Backyard Barbecue Cookbook" We don't really care for drumsticks so I used this on skinless chicken breasts. Worked great. I have it marked "excellent!" in the book. You can add a little chili sauce if you prefer it hotter. Hope you enjoy! Prep time includes 1 hour marinating."

Step by Step Method

Step 1

Combine the soy sauce, garlic, onion, pepper, honey and ginger wine or sherry in a small pan, stir over a low heat until the honey softens and the ingredients are thoroughly mixed.

Step 2

Remove the skin from the drumsticks and score through the flesh at 3/4 inch intervals.

Step 3

Pour the marinade over the prepared chicken and allow to marinate for 1 hour.

Step 4

Remove the drumsticks from the marinade and barbecue over a preheated, oiled grill with the hood down for 20-25 minutes, turning occasionally until the chicken is tender and juices are clear.

Step 5

Brush two or three times with the remaining marinade towards the end of cooking.

These are so good -- unfortunately it is still chilly out, so I cooked them in the oven at 400 for about 30 minutes. Delicious! Thanks for sharing!

I did make a couple of slight changes to this recipe. I left the skin on as per DH's request and I cooked these under the broiler because the weather was not conducive to BBQing. They turned out very tasty!

I scaled back for 1 serve and used two drumsticks which had a weight of 250 grams, marinated as per recipe but cooked in a 170C oven covered for 25 minutes and then uncovered for 20 minutes and the end result was slightly sticky moist delicious drums which I thoroughly enjoyed, thank you TeresaS made for Went To Market tag game at FF&F

Good chicken! I could not find green ginger wine so I used sherry wine, I am thinking I will have to double the marinade next time, I used just over 3 pounds of bone in thighs and it just wasn't all that much marinade. I seasoned the chicken with salt and pepper before grilling and the chicken turned out very tasty. Thanks you!
