Step by Step Method

Step 1

Melt butter in large Dutch oven over medium heat.

Step 2

Add grated ginger root and carrots and toss until evenly coated.

Step 3

Cover pot and cook about 8-10 minutes, turning three times, or until crisp tender.

Step 4

Uncover; toss with honey. Raise heat to medium-high; stir-cook until carrots are tender and glazed, 2-4 minutes.

Step 5

Add remaining ingredients and gently turn to combine.

Step 6

Note: Carrots can be slightly undercooked through Step 3 ahead of time and refrigerated. Reheat before adding honey and remaining ingredients.

Taste and flavour exceptional I did scale back for 3 serves and used less than the recommended amount but we could not get through it all so will scale back to 2 serves for us and very well worth making, thank you Kerfuffle-Upon-Winkle for a great side, made for Pick Me tag game.

weekend cooker

Very very flavorful side dish... YUUUMMM !! The chopped ginger and the honey were well liked in this, and went extremely well with dinner.
