A very simple yet flavorful dish that DH couldn't get enough of. I used the 25 ounce can of Juanita's brand hominy. I might reduce the amount of sugar next time - the hominy lends sweetness. Delicious! Thanks dienia b!.

  • 2 cans (15 1/2 ounce) hominy
  • 1 can (14 1/2 ounce) diced tomatoes
  • 1 yellow onion (diced)
  • 1/2 cup diced green bell pepper
  • 1 teaspoon salt
  • 2 tablespoons butter
  • 2 tablespoons granulated sugar

Step 1

Place hominy in buttered casserole dish.

Step 2

Sauté onions and green peppers in butter until soft.

Step 3

Add tomatoes, sugar and salt and simmer for 10 minutes.

Step 4

Pour mixture over hominy .

Step 5

Cover, bake 350º for 30 minutes.
