Step by Step Method

Step 1

In a large pot, heat oil over medium heat and add onions. Saute until they begin to soften. Stir in garlic and cook another 2 minutes, being careful not to let garlic brown.

Step 2

Stir in remaining ingredients and cook over medium heat until heated through, about 30 minutes.

Step 3

Serve.

Daily Inspiration

We enjoyed this vegetarian chili. I don't normally cook with hominy, but it added a very unique taste which you would not get from regular corn. I did have to add some broth to the pot and then I covered the pot to keep the moisture in. I also added some juice from a can of rotel tomatoes and chilies to spice it up a little more.
