Step by Step Method

TO MAKE THE PANCAKE


Step 1

Heat a 12-inch cast iron skillet in a 450-degrees Fahrenheit oven for 5 minutes.

Step 2

Combine first 3 ingredients in a mixing bowl; beat at medium speed with an electric mixer until smooth. Add flour and salt; beat 5 minutes.

Step 3

Melt butter in a skillet; pour batter into hot skillet.

Step 4

Bake at 450-degrees Fahrenheit for 15 minutes; reduce oven temperature to 350-degrees, and bake 8 additional minutes or until puffed and browned. Remove from oven; spoon warm Apple Filling over pancake (pancake will deflate, though it barely deflates for me. I believe it's because you have to make sure that it's fully cooked). Sprinkle with powdered sugar, and dollop with whipped cream. Cut into wedges, and serve immediately.

Step 5

Melt butter in a large skillet over medium-high heat; add apple, and cook stirring constantly, 12 minutes or until tender. Stir in honey and cinnamon; cook just until thoroughly heated through.

Yum! It was so nice to have an easy, fast and delicious brunch to impress the DH! I had a package of frozen peach slices from last summer and no apples, so a peachy filling it was! Yum!

Needed something quick and easy this cool Fall morning as have company and wanted something different, but not much time. Made this exactly as presented and it was delicious, impressed everyone with all it's fall flavors, and was ready at the same time for everyone.

Delicious forevermama, simply delicious. This lovely puff pancake was perfect. Light, tender, fluffy and flavorful. The apples were wonderful, soft, tender and delicious.
