"My family and I love rice pilaf. This particular recipe is quite different than the traditional pilaf considering that it contains dry chicken noodle soup mix. It is pretty good and pares well with almost anything."

Step by Step Method

Step 1

In a large skillet, cook the rice, celery and onion in butter, stirring constantly, until rice is browned.

Step 2

Stir in the next eight ingredients; bring to a boil. Taste water for seasoning. Adjust salt and black pepper, if necessary. Reduce heat; cover and simmer for 10 minutes. Remove the bay leaf.

Step 3

Stir in the pimentos if desired. Remove from heat and let stand for 10 minutes.

Easy to make and a delicious side... I forgot to add the pimentos (and I had them on the counter!) but otherwise followed the instructions as directed.

This is like a "rice-a-roni" pilaf. I had to add more water, as the rice and noodles were still pretty tough after the 10 minute cook and 10 minute resting time. We really enjoyed the flavor of this rice pilaf. I can see this as a side to just about anything!

Delightful. I used a "thyme and lemon bouillon" from Knorr instead of the dry chicken noodle soup mix.It work very well.

Great rice. I skipped the pimentos and instead of soup mix, I buy the packages of vermicelli that is already broken up in small pieces, so used about 1/3 cup of that and 3 teaspoons of low-sodium chicken bouillon powder. Will be making this again.
