"This is a quick, healthy and tasty soup. It makes a big batch! If you want to add meat to enhance flavor, I have added cooked browned italian sausage or cooked italian linked sausage and cut them into chunks. Hope you enjoy!"

Step by Step Method

Step 1

In a dutch oven or similar large soup pan, saute onion in oil for 2 minutes.

Step 2

Add the celery, carrots, cabbage, bell pepper, zucchini and garlic, saute 3 minutes longer.

Step 3

Stir in the water, all the tomatoes, bean and seasonings.

Step 4

Bring to a boil. Reduce heat, and cover. Simmer for 15 minutes. Stir in pasta and cook 15 minutes longer. Garnish with cheese.

Great soup! The flavors of the veggies and seasonings worked so well together. We sprinkled it with a little Parmesan - yum! My college-aged son has asked me to make more vegetarian entrees and this satisfying soup made everyone in the family happy. Thanks Dissie - we'll make this again.

Great soup with old fashioned goodness.The vegetables came together to make for bowls of delicious Minestrone soup. Served with crusty buns a wonderful evening meal with enough left over to add to my freezer stash to enjoy another time. Thank you Disie, we loved this one!
