"A delicious and healthy snack for everyone of all ages, best of all they are easy with no oven baking involved. To toast coconut, in a small skillet over medium heat, 4-6 minutes, stirring occasionally and being careful not to burn it. It's done when some of the flakes are lightly golden."

Step by Step Method
Step 1
In a medium bowl, stir together toasted coconut, oats, brown rice cereal, flaxseed, and cinnamon.
Step 2
In a bowl, whisk together nut butter, honey, and vanilla. Pour over oat mixture and stir until everything is well combined. Stir in chocolate chips. Chill in refrigerator for 30 minutes.
Step 3
Use a small scoop, spoon, or your hands to scoop mixture and form into balls. I usually press the mixture into a ball using my palm, rather than rolling it. Store in an airtight container in the refrigerator for up to 1 week.
