Step by Step Method

Step 1

Preheat oven to 350° F.

Step 2

Mix sweet potatoes, butter, salt, pepper, cinnamon, nutmeg and brown sugar well. Spray hands with non-stick cooking spray for easy handling of mixture. Make into 8 balls. Roll balls in crushed corn flakes. Spray cookie sheet with non-stick cooking spray or line with parchment paper. Place pineapple rings on it.Place sweet potato balls on top of pineapple slice and top with cherries. Bake at 350 degrees for 30 minutes.
