Harry's Celery Soup

"This is one of my brother's easy to make recipes. You can make many variations on this basic recipe. Add a cup of cooked macaroni, or add cooked rice, add other veggies. This is tasty as it is but use your imagination and let it grow from here."

YUM !! one of our favourite soups, delicious and flavourful and soo easy to put together. Makes a lovely tummy warmer on cool days, i make it often, thanks Bergy!!.

  Ingredients

  • 1 1/2 cups celery, chopped (leaves included, chopped)
  • 1/2 cup leeks, chopped (cleaned, white parts only)
  • 3 tablespoons butter (or margerine)
  • 2 large tomatoes, chopped
  • 6 cups low-sodium chicken stock
  • Salt and pepper to taste

  How to Make
 
 

Step 1

Saute the celery, leeks and tomato in the butter for 5 minutes

Step 2

Add chicken stock, continue cooking for a further 25 minutes

Step 3

Season and serve.
