Step by Step Method

Step 1

In a large saucepan, cook the potatoes, cauliflower and onion in chicken broth until tender.

Step 2

Stir in milk, ham, salt, pepper and nutmeg; heat through.

Step 3

Stir in potato flakes; simmer for 5-10 minutes or until soup is as thick as desired.

Step 4

Sprinkle with parsley.

I made a half recipe and the DS and I scoffed the lot between us for dinner with some crusty garlic bread, I had just over a third of the soup and the DS polished of the rest. Absolutely delicious and so easy to make though it wasn't until we had finished that I realized I had forgotten to sprinkle the parsley on top oops, thank you Mikekey, made for Alphabet Soup tag game.

This is a great belly filling soup we really enjoyed. I used leftovers from our Xmas ham and I did add some cooked corn to this which was very nice. Thx for sharing this recipe here :)
