Step by Step Method
Step 1
Paint the separated mini pitas with a bit of olive oil, add a roasted clove of garlic, smeared on and toast until golden. Use 2 tablespoons of oil
Step 2
Cut the cheese into 12 pieces Put 2 tablespoons of oil in a skillet, over medium heat gently fry the cheese until it is golden undereath, flip and fry other side. Be careful the cheese can burn easily
Step 3
While the cheese is frying mix together 2 tablespoons oil, lemon juice and oregano, Paint the top of fried cheese with the oil/lemon mixture
Step 4
Slip a piece of cheese on each pita half, top with 1 teaspoon of salsa and serve warm
