Step by Step Method

Step 1

Heat olive oil in a small skillet over medium heat.

Step 2

Add zucchini, onions and garlic.

Step 3

Cook and stir until zucchini is tender, about 5-6 minutes.

Step 4

Remove from heat and stir in tomatoes, basil, salt & pepper.

Step 5

Rinse fish steaks and pat dry with paper towels.

Step 6

Spray a medium baking pan with cooking spray and place fish in pan.

Step 7

Spoon 1/4 tomato/zucchini mixture over each fish steak.

Step 8

Top with feta cheese.

Step 9

Bake at 450F for 12-15 minutes, depending on thickness of fish.

Step 10

Serve immediately.

Very good and interesting fish! We changed it a bit by using mahi mahi and a green bell pepper instead of the zucchini. I also used oregano instead of the basil. Good and easy! Thanks for sharing!
